So, if you’re still with me here is a little laugh. My three youngest children are in swim and all under 10. We go to swim meets on Saturdays from 6a to 1:30p. If you haven’t heard, Houston is hot, really hot, and this year is no exception. In fact, it has been another record scorching year. Being on the keto diet has lead to creative ways to have keto food on the go, but it all goes out the window for me when I’m stressed!
Sitting in the hot and feeling physically uncomfortable can simply lead to emotional discomfort and rooting around for comfort food. A time when your mom took care of you unconditionally. (Aw, went a little deep there!) Any way, toward the end of the day the pizzas showed up at the concession stand and I secretly (well it was a secret before this post) cursed the organizer.
By the time we returned home I was ravenous. There was a new pizza recipe in the queue and I was already feeling superior to those junk eaters spreading processed weight around. I began to unload my recipe ingredients anticipating the comfort ahead! By the time I realized I was missing three of the ingredients I had already prepped and combined the cheese and flour.
Here is the video that started it all! What makes it so delicious to me is: the mouth feel, the taste and the fact and can fold it. Yeah, that’s a thing for me.
That being said…
The most important step here is the technique!
The flour was so sticky I could not even detach it from the greased parchment paper! Grease on grease people and it was still hanging on. What was I going to do? Unwilling to admit defeat (and I was starving remember) I decided to use the dough “as is”. In hunger, frustration and exhaustion, and my desire not to be weak like “them”, I threw the crust into the oven atop my pizza stone with the parchment paper on top and on bottom.
To be honest with you, I felt like some kind of genius; when I shared this technique with a cooking friend (professional), he replied, “yeah?” Like: “yeah, what’s the big deal?” Agh!
Moving on. Here is the rub: you want the pliable pizza crust, but you don’t want sticky dough that is impossible to work with. This technique gives you the ability to work with the sticky dough and that is really the secret. Along with some parchment paper and the recipe below, you can make it too.
3 Ingredient Keto/Low Carb Pizza Crust Recipe
- 1 1/2 c mozzarella cheese
- 1 c super fine almond flour
- 2 eggs
- Optional; suggested: 1/2 tsp Xanthan Gum (I use this) & 1 tsp Italian Seasoning (I use this).
First, preheat the oven to 400 degrees. I leave my pizza stone in the oven to preheat too.
Then microwave the cheese in 30 second increments until the cheese is melted.
While the cheese is melting, combine the flour, xanthan gum and seasoning.
When the cheese is melted, add the dry ingredients to the cheese and mix well. You do not want uneven coloring in your dough. The easiest way I have found to blend the dough evenly is in a food processor. Remember, it will be sticky. Using a spatula lightly covered in cooking spray/oil helps get the sticky dough out of the processor and onto the parchment paper.
Spray a piece of parchment paper with cooking spray. Place your dough in the center and place another piece of coated parchment paper on-top. Roll the dough out to your liking.
Place the dough and both pieces of parchment paper in the oven and bake for five to six minutes. Remove it from the oven and carefully remove the parchment paper. Return the dough to the stone and add your toppings. Return to the oven for 15 minutes.
