Being on a keto meal plan can be difficult at times, especially when you are missing bread or dough in general. Well, any comfort food really. You have to employ some divergent-thinking if you know what I mean!
Keto friendly pizza is one of those ideas that lead to solutions that will keep you eating healthy when you really don’t want to.
On Monday’s I clean my house, deep clean my face, and I make keto friendly pizza a.k.a. cauliflower pizza crust. If you are trying to get your veggies in and still want room for comfort food this recipe will deliver. This recipe turns cauliflower into a pizza topping delivery device!
First, preheat your oven to 450.
If you can, I like to use precut cauliflower straight from the bag. I get mind from HEB and they come prepackaged with two cups. If you can not get it that way, break up a small head of cauliflower into tiny pieces then cut it down into smaller pieces. Avoid a food processor or blender. In a bowl, I add two eggs, the cauliflower, and a 16oz bag of thick cut mozzarella cheese. That’s it! Mix it all up.
You can add additional spices if you like. For example, I might add a tablespoon of Italian seasoning along with a teaspoon of garlic powder. Play around with it until the flavor is what you are expecting. While the oven is preheating I like to leave my pizza stone in the oven.
Once the oven is ready, I remove the stone and begin to distribute the cauliflower pizza crust until it is as thick as I like it. Then I bake it for 15-20 minutes (closer to 20 then 15). I have found the top rack delivers better results then the middle rack. This is what mine looks like once it is laid out.
After 20 minutes in my stove I top the baked crust with a low carb pizza sauce and all my favorite toppings (e.g., onions, green peppers, black olives, etc.). Once complied I return the pizza to the oven for an additional 10 minutes or so, or until all the toppings are nice and gooey and the cheese is completely melted. Covering the edges with foil with help avoid burning the crust.

Cauliflower Pizza Crust Keto Friendly Pizza
Cauliflower pizza crust recipe - just add toppings you enjoy.
Crust only (2 slices): 229 cal, 9 carbs, 15 fat, 21 protein
- 2 cups Cauliflower Rice
- 2 cups Thick Mozzarella
- 2 large Eggs
- 1 tbsp Italian Seasoning
- 1 tsp Garlic Powder
Mix all of the contents together and cook for 10 minutes at 450 degrees.
Pull out of the oven and top with your favorite ingredients.
Return to oven and cook until the toppings are gooey and melted (about 10 minutes).
If you have a pizza stone, leave it in the oven while it preheats. Then pile on the crust and flatten it out to the width you like.
