Low carb desserts … why? After the first four weeks on the Keto Diet I lost 20 pounds, which led to the Ketogenic Diet for Dummies post or you can watch the video. As one might guess, after next to no sugars for a month I began to dream about some sweet treats (and I am not a sweet girl).
If the keto diet does anything it makes you fluent in food adjectives.
Cheesecake was a dessert that keep coming around calling my name. The New York cheesecake kind that is simply delightful and especially alluring when you just have a lightly brown outer edge.
Here’s the recipe I used to curb my sweet cravings and it is a low carb dessert that only takes about 10 minutes to prepare.

Now, let me say that I like a thicker crust, so feel free to thin it out if you like. Another tip: cover the top with Aluminum foil for the first 45 minutes and then cook the last 15 minutes without the foil. This will avoid burning the top.
Ingredients You’ll Need to Start Right Now

8 oz Slivered Almonds
8 TBL Butter
1/4 TSP Cinnamon (optional)
1 TSP Stevia
Notes: you can use less/more Stevia or Erythritol

20 oz Cream Cheese
1.5 c Sour Cream
3 Large Eggs
1-2 tsp vanilla
10-20 TBL Erythritol (or add to taste)

Pulse slivered almonds and Stevia. Slowly work in the melted butter (and cinnamon if you like). It should look like wet sand. Then press the crust mixture out evenly on the bottom of the pan and set aside.

With a mixer beat the room temperature cream cheese until a good amount of air is worked in (fluffy). Add the Erythritol, the sour cream, vanilla and then the eggs one by one.
Pour the cake mixture over the crust and bake for 60 minutes at 350 degrees. Turn off the oven and crack the door. Let the cake stand for one hour. Then remove and chill in the over for 24 hours.

Easy DIY Low Carb Desserts - Keto Cheesecake with cream cheese and an yummy almond crust.
- 20 oz Cream Cheese Room Temprature
- 3 Large Eggs
- 1.5 TBL Vanilla Extract
- 8 oz Slivered Almonds
- 8 TBL Butter Grass Fed
- 1 tsp Stevia
- 1.5 C Sour Cream
- 10 TBL Erythritol More/Less to Taste
In a food processor mix the almonds, butter (melted) and stevia.
I like mine a little thick; make it to your preference.
Layer on the bottom of the pan and set aside.
Mix the remain ingredients together with a mixer and pour over crust.
Cover with foil and bake for 45 minutes at 350 degrees. Remove the foil and bake an additional 15 minutes. Don't be alarmed if the cake rises.
Shut the oven off and crack the door open. Let cheesecake stand for 1 more hour. Chill in fridge over night.
You can use small cookie cutters for smaller, personalized servings.
